I made these delicious sugar cookie bars to take to our 4th of July celebration yesterday. Unfortunately for the cake, we had a two hour drive ahead of us and it absolutely HAD to be taste tested! I'm sure your first thought was that one of my children ate into the corner. Ummmmmm no, that would be me.....their mother and would be example who just happens to have a wicked sweet-tooth. And yes, that is an awfully big "taste"......I'm aware!
We had a fabulous day filled with family, yummy food, and lots of fun. The highlight of the day was our rigged redneck slip-n-slide in the backyard. The kids spent hours and hours out there...seriously. Who knew a big 'ol plastic tarp, a sprinkler, and some dish soap could be so much fun???
SUGAR COOKIE BARS
1 cup butter
2 cups sugar
4 eggs
2 tsp vanilla
5 cups flour
1 tsp salt
1/2 tsp soda
Cream butter and sugar together until fluffy. Add eggs, one at a time, mixing after each egg. Add vanilla & mix well. In a seperate bowl combine flour, salt, & soda and stir with a whisk to combine. Add to wet mixture and mix just until combined. Spread on a greased baking sheet (I used a 13 x 18). Bake at 375 degrees for 10 - 15 minutes, until light golden brown or until toothpick comes out clean. Cool completely and frost.
Frosting
1/2 cup butter (room temp)
1/2 cup shortening
1 tsp vanilla
pinch of salt
4 cups powdered sugar
5 Tbsp milk
Combine butter and shortening until smooth and creamy. Add vanilla and salt. Add powdered sugar in 1-2 cup increments until combined, than add milk and mix until smooth and spreading consistency. Spread over cooled cookie.

Um. YUM! My daughter loves sugar cookies, so we'll be making this. And Amanda, didn't you know you supposed to sample things 3 times just to be sure? Jesus says things 3 times, Santa says it 3 times... need I say more? 3's the magic number. So I don't think that sample is quite big enough! ;)
